I'm renting a house with 10 other people at an island in El Tigre. We are splitting meal preparation. My gf and I are taking care of Friday's dinner. We've decided to make tacos.

What are some of your favorite taco recipes, tips and tricks? Share them here please

Sometimes I'll mix ground beef with ground turkey. It tastes great and makes it healthier.

Quinoa taco meat
Rinse 1 cup of quinoa, then simmer in veggie stock for 15 minutes.
Drain excess water. Mix with 1/2 cup mild salsa, a tablespoon of nutritional yeast, a tablespoon of olive oil, a healthy dose of cumin, chili powder, and a little salt, pepper and garlic powder.
Spread evenly and bake for 20 mins, stirring once after ten mins.
Serve and enjoy.
I don't have any pictures of this, but it's good.

Why did you sign up for a meal for so many people if you need RM's help to prepare it? Sounds risky.

Just looking for tips. I could make some simple ground beef filling, chop up some vegetables, whip up some guacamole and some refried beans. But maybe someone has ideas for something different

I like putting salsa in with the beef while it's cooking.

Skirt steak instead of ground beef, Jorge. Marinate to taste.

Bring a small slow-cooker and do some pork shoulder.
