Because reali life science nerds realised upon seeing the film that it seemed to have been used a measurement of speed and made it a thing. A thing that stuck somehow in the pre internet age.

Or, Lucas fucked up.
Why wouldn't you roll with it, though? "Oh, parsec, in the Star Wars universe is a measurement of time." Done. It's a language from a long time ago, in a galaxy far, far away. Why would you try to shoehorn in uses of it as distance later?
Luke has never seen a lightsaber. Nor a Jedi. Nor a sith. Nor seen obi wans efforts to protect him and his family.
But mainly? If he'd seen Maul at any point or anyone Come to kill him he'd fucking remember it.
Im talking about what Maul INTENDS to do. Not actually accomplishes. Darth Maul goes to Tattooine to locate Luke (the one who can destroy the sith). Obi Wan, who is on Tattooine doing nothing but hanging out, intercepts Maul and kills him before he can get to Luke. Who remains safe and has no clue that any of that even happened.
1. Explains why Maul is gone before the original trilogy 2. Gives Obi-Wan something to do and makes his exile have a purpose 3. Lets Obi-Wan Finish what he started with Maul providing the symmetry the Star Wars Universe loves so much 4. Gives them a reason to introduce Obi Wan to the series, who has previously been unseen
