I just made some homemade fried rice that was relatively healthy and really delicious. Tofu fried in a little olive oil, frozen broccoli and carrots and water chestnuts, a little ginger, soy sauce and srirhacha. Some badass comfort food.

I've got three types of greens that don't really go together, so I'm thinking of introducing strawberries and watermelon radish to the mix and see if I can't achieve a little unity. My only question is, what kind of protein? I'm bored with chicken, I'm not sure that shrimp or crab would work, and I don't want any fatty meat.

It does not. I'm keen on the idea of tofu, but I've never cooked that before. The texture of tofu would work well in this salad and I don't want to mess with the flavor of the other stuff too much.

The greens I'm working with are kale, what looks like bibb lettuce but is actually some sort of micro-bibb grown hydroponically, and another wierd hydroponic called "fire." The leaves are narrow, jagged, and colored deep maroon and forest green. Supposedly great on tacos, but I'm using it in a salad today.
