Killer quick pasta recipe featuring leeks, mushrooms, and mint (preferably porcini, but portabella is a much cheaper alternative). I had this in Tuscany in '07 and it rocked my world, so I've been recreating it at home ever since.

2 Tbsp olive oil
2 Tbsp butter
1/2 leek, sliced thin
approx. 1 cup sliced mushrooms
1/2 cup finely chopped fresh mint
1/4 tsp salt
1/4 tsp pepper
white wine
aleppo or similar hot/fruity pepper flake
Linguini or other pasta, preferably fresh
Romano cheese or similar, if desired

Add butter and olive oil in a pan, set to med-high heat.
Let butter and oil begin to bubble, then wait for it to stop bubbling -- DO NOT RUSH THIS PART.
(While waiting for the butter to settle down, get your salted water going for your pasta.)
Add salt, pepper,and chili flake to the butter/oil.
Add mushrooms and sauté for one minute.
Add leeks and a small splash of white wine and sauté for one more minute.
Remove from heat. Add 1 Tbsp of pasta water to the pan and give a quick stir.
Toss pasta in the sauté pan, adding chopped mint.
Portion into serving dishes, top with add'l salt, pepper, chili flake, and grated cheese if desired.
