Saw an article about a new restaurant that is opening up in Huntsville, based out of Texas. I found the below from an interview with the owner really intriguing Can you talk a little bit about the food here?
We do five basic things, which is a no brainer. To do this on a very consistent basis every day is a challenge. We specialize in brisket. In Texas, if you don’t have brisket no one comes in your restaurant. We have brisket, ribs and sausage. The sausage that we do is the original family recipe from 1900. We ship it here. It’s hand made and hand crafted in Lockhart. That’s a huge thing. Not a lot of people get exposed to that sausage without going to Lockhart. Those are our important things. We do some Texas vegetarian dishes like chicken and turkey. Turkey right now we don’t have because the breast that we do doesn’t exist. We probably won’t get it before January because of the bird flu that went around got all of the turkeys.
We’ll do pork chops. And when we get up and going, we’ll do pork belly burnt ends, regular burnt ends. We’ll do some prime rib. Most of that is beef.
