I’ve never had the sausage, but it would have to have some other fat mixed with it. Pheasant is the absolute driest meat I’ve ever eaten. It’s like trying to eat a mouthful of sawdust.

“Venison” is a loose term that can mean elk, deer, moose...And they may be adding pork or other fat and not telling you.

Antelope can be good if cooked right.

And I’m with Ruddo. Properly cooked pheasant can be super juicy, like a gamier, less fatty duck.

ah yeah - i think i've only had deer meat then...deer jerky was fine and i think i had it in cheese dip once, but when i had it in stew i didn't care that much for it
