i'll go med rare if the cheese is totally melting and hot...nothing worse than a cold piece of cheese on top of a burger..people that do that should be kicked in the crotch..

I think a lot of people do, and I think it has to do with the health concerns related to ground beef. In fact, the CDC and FDA both say ground beef should be cooked to 160 degrees Farenheit (well done), and this applies to both ground beef you get at the supermarket and beef you grind up at home. This is because all the bacteria that is on the surface of the meat (which you would quickly kill by cooking it as a steak) is now mixed up with the rest of it. Here's a good video about it featuring an interview with the director of the Center of Food Safety. I'm only now learning about all this; when I cook burgers at home, they always come out medium/trending to medium rare, but mostly by accident!

Yes, and the FDA guidelines – – around both this and generally everything else – – tend to be structured for the most vulnerable people, like pregnant women, the elderly, people with compromised immune systems. And we are now looking at about 15 years of farm to table restaurants serving very rare meat, that has been minimally processed, with no major outbreaks yet.

I think that if you are a healthy person, you can generally go ahead and eat your meat rare.

Yeah I have no concerns about eating my steaks medium rare (just cooked up an incredible ribeye, perfectly pink throughout -- I'm getting good at this!), but reading the information about the surface bacteria and how it can get mixed up in ground beef kinda squicked me out just now
