Some things from the prequels I would change / like to see.. (in no order, just d_v drivel)

1. Anakin is older in Ep1.
2. Ep1 has more focus on the rise of Palpatine
3. The clone wars start during or towards the end of Ep1.
4. Anakin and Owen are real brothers.
5. Anakin leaves Owen after their parents are killed to follow Obi-Wan on some damn fool idealistic crusade.
6. It's OK if Jedi have attachments, they do not need to be monks.
7. More adventures with Obi-wan and Anakin, really show the good times with these two.
8. Anakin saves Padme's life, and they quickly fall in love.
9. Show more scenes in Ep2 and Ep3 where Palpatine is grooming Anakin.
10. Make the Jedi Temple in more of a chill place with like a bunch of trees or something. Not in the middle of a huge city with millions of flying cars going by it.
11. Yoda finds a way to do the Force Ghost thing
12. Talk about Yoda training Obi-wan
13. Padme fakes her death but dies when Leia is very young.
14. Incorporate Qui-gon Jinn into Obi-wan and Yoda. (I like the character but some of that should be Obi-Wan / Anakin).
15. Either have Dooku or Maul with Palpatine for all three films.
16. Luke is born on Degobah (hence why it's familiar to him in Ep5).
17. Show Tarkin as a high commander of the republic and a trusted ally to Palpatine.
18. Remove Jar-Jar all together.

Things I'm not so sure what to do with:

1. The clones. In the Thrawn Trilogy, clones were like crazy Jedi or something, this could have been interesting.
2. Count Dooku / Maul. I like the characters but think just one of them should have been used in all 3 films.

I used to not like them. But all the ancillary stuff that has come out has really enhanced them for me.

Or just hire the other finalist actor Jake Lloyd was up against (see: "The Beginning" documentary for the screen test where the other kid blew Jake out of the water).
