Mod is the best of those build your own pizza joints. There's also Blaze (owned by LeBron) and Your Pie.
is this like Kramer's idea made real?
I'm not sure I recall that episode but there have been these kinds of places for decades. I used to go to one all the time in Indiana when I was like 8.

One of my finer moments was suggesting this when all my extended family and their kids were in town, they loved being able to get basic pizzas for the tikes and still being able to get what they wanted. Its not bad pizza either.
