It's funny, working in restaurants all my life, I would totally do that on the line. But at home I tend to be a lot more fussy.

If it’s raw beef, who cares? You’ll be fine.

I guess I was more thinking about poultry. I don’t cook burgers often. I grill steaks and chicken tits far more often.

I'm confused. Take the burger off the plate to put it on a grill?

What am I missing? I thought we were talking about taking the burger from the grill

Right, the question posed was when you flip the burger. But you only do that once, and when you do, the side you are touching with the spatula is already cooked. So the only way raw meat is touching the spatula is if you carry the uncooked burger from the kitchen or wherever to the grill, and set it on the grill with your spatula. Which is what it sounds like trag and others are doing

anytime my wife leaves town, the immediate answer for me is take myself/bring a friend out for bbq, or stay in and make a really good burger.

Course out your meals properly at a Chinese buffet or just pile it on to one or two big chaotic plates?
