Some bread I made yesterday. My wife got me this book https://www.amazon.com/Flour-Water-Salt-Yeast-Fundamentals/dp/160774273X for my birthday last year. It goes into a ton of detail about the temperature of the water and the dough, how to fold, divide, etc, and doing everything by hand, but I pretty much just combine the ingredients, toss it in the mixer, let it rise, and bake it. Turns out pretty good.
