I have an all purpose kitchen knife from Martin Yan and it has served me well over the years.
But back to the topic of this fine thread, if you drape a tortilla over two rungs of your oven rack and then let the sides hang down and bake, they make a perfect taco shell. (Add olive oil lightly before baking in oven).

If making pancakes, put 1 Tbsp acid (apple cider vin or lemon juice are both perfect) into 1 cup milk and set aside as you get the other ingredients rounded up. Don't stir the milk and acid, just pour and let it sit. By the time you're ready to add the milk, there's a reaction that will have happened that will result in some very fluffy pancakes.
If making a large amount and holding in the over until the batch is done, make sure you're separating layered caked with good paper towels, otherwise they'll create too much humidity when stacked on top of each other, and you'll undo the fluffiness.

if you bake a lot like we do, grating a frozen stick of butter sure does the trick...add it to flour etc...also works when your butter is too cold to spread on toast or whatnot
