No disrespect intended, but for the guy who was considering a move into waiting tables: You can do much better than this. You'll have to get some experience under your belt first, but the money can become pretty significant. I would regularly get $300 a shift, and I have friends who currently get around $700 a night at places that come with more bullshit attached. It makes it hard to walk away, once you get used to it...
That was years ago, and in Mississippi dollars. I was practically a millionaire.

Anyway, the labels can be very misleading, and there are changes on the way to simplify them. That's a start, hopefully it's a positive change.

Yea, the labeling laws are messed up. But those front-of-package claims and eco-labels (USDA Organic, NON-GMO Project Verified, etc) do serve a purpose of communicating very complex regulations to your average consumer. A lot of my degree was spent diving really deep into this; I built chicken housing that was in full compliance with Certified Humane standards, and that was a very involved process that required a lot of input from the CH organization. Things like "perches must be round and 1" in diameter" and "hens must be able to dismount from all perches at a 45 degree angle" are way too involved for your average shopper, so those labels are intended to simplify the assessment of complex production systems.

Some labels are good, some are bad. You've really got to do your homework. Certified Humane and Animal Welfare Approved are both pretty great, IMO. I think the Non-GMO Project labels are a sham. Who cares if they're Non-GMO? My opinion is that GMO labeling is WAY more important than the actual use of GMOs. Not all GMOs are bad; some are quite incredible. But I do believe consumers should have a choice. The label attempts to villainize GMOs, when in reality the villains are people who try to block GMO labeling.

Are you able to say more about what your wife does? There is an enormous food security component to our ice cream product, and we are currently working on labeling that communicates our values clearly, so this stuff is always on my mind.

That's so hard for me to fathom. Waiting tables would be my nightmare job.

Before I joined the military I was a bartender and waiter and a popular seafood joint here at the beach. From May thru September I would walk out of every shift with at least 300 bucks in tips. Was a shock to my wallet when I first went into the military.

i've heard of people being bartenders and waiters, but never whole restaurants!
