Once, I was watching my sister in law make garlic mashed potatoes and I was all "that's a lot of garlic, you might want to go easy and not use too much". Her reply, and everyone else agreed with her, was "you can never have too much garlic".
One bite and we all agreed there was too much garlic.

I'll eat garlic in just about anything that isn't a dessert. And maybe even some desserts, too.
Don't do it. I grew up next to, and briefly lived in, Gilroy,Ca-the garlic capital of the world. Garlic is fantastic in virtually any food. However, I have tried garlic ice cream at the Garlic Festival, and it was straight nasty.
And nothing beats a roasted clove of garlic- totally changes the consistency and flavor...mmmmmmmm
