I didn't say I didn't like them. I like them fine. I just wonder why that's a thing with hotel breakfasts. They're always way runnier than you'dusually get at, like, a diner.

I'm wondering if there's a cultural disconnect here vis-a-vis hotels and eggs. In the US you've got your Holiday Inns, La Quintas, etc, that in my experience cook things in large batches and typically offer hard boiled or scrambled eggs; and then there are your nicer places like the Ace that will make your eggs to order.

I am talking about breakfast buffets, and that's been the case in pretty much every hotel I've ever stayed at, everywhere I've been in the world, even the really nice ones. That's what I find curious. Maybe there's like a Hotel Egg Code.

Yeah, those budget hotels in the US I mentioned are also buffets, and you can usually have scrambled or hard-boiled.

I feel like we may be missing each other's point 'cause I don't know what hard boiled eggs have to do with anything. I am talking about scrambled eggs specifically

Have any RMers ever made a great honest-to-god ramen before? I'd like to tackle it this winter but not sure where to start. My Asian cooking knowledge is relatively limited.
