Kenji’s reverse sear is just the at-home version of a technique popularized by pro chefs over the last 10-15 years: Cook it low and slow in a sous visdes setup, hold it at a warm temp during service, then sear it when the customer orders it.

Kenji definitely saw my former boss doing this many, many nights, when he would be stageing in his kitchen.

It’s super common in restaurants now and it tastes delicious.

So this is bullshit. I was getting drinks for a thing tomorrow and the diet coke boxes said 4 for $12. At my local store that always divides down to the individual price. So in other words $3 each and you don’t have to buy 4 of them for the sale price.

I only needed one and at checkout it was 5.99 regular full price! WTF! You had to buy 4!

I didn’t feel like hobbling my ass back to exchange it or whatever. F U grocery store.
