how about i just slice them and put them in hot oil and then eat them, lily gilder
How do you keep them from becoming mush?
a combination of getting the oil up to temp before you put them in and letting them cook long enough to develop a bit of crispiness. be careful though because you don't want the oil so hot that they burn.
it took me three or four tries before i really dialed it in.

Speaking of Sean Brock, I was surprised to learn that he's a very recently recovering alcoholic. Read about it recently and came across http://www.chefswithissues.com in the process. Glad to hear more and more people are talking about how prevalent alcohol and substance abuse are in the industry.

I saw a former co-worker hit absolute disappear-for-three-days rock bottom before being caught trying to break into the restaurant for booze while we were closing. One of the most talented guys I've ever met. Went into some serious rehab, started doing steak nights on a food truck across town to get back on his feet, built his name back up and has recently opened up a great restaurant in the northwest.
One story with a good ending. Hope your friend kicks ass for a long time, Doug.

I don't miss that side of the industry at all. I'm mostly surrounded by kids/families, so it's got a way healthier vibe for me. The other stuff can really wear you down fast.
