It’s not overrated, it’s fucking delicious when done right. The problem is that it became a go-to menu item for mediocre restaurants to convey gastropub trendiness, and it wound up on every menu, in varying degrees of execution.

But good lord let’s not say things like “pork belly is overrated.” It’s 3/4” succulent bacon. The platonic ideal of pork belly is properly rated as godly.
