i just had leftover meatball mix (80/20 beef and pork) from last week so i made some sauce and stuffed the peppers

A cauliflower gratin:
-Goat cheese
-Sauteed red onion
-Roasted cauliflower
-Hint of Cinnamon
-Garlic
-Thyme
-Chopped tomatoes
-2 beaten eggs

1. Roast cauliflower and then combine the above ingredients in a casserole dish with the cauliflower
2. Top with half of the goat cheese and bake until bubbly
