Just made the best wings I’ve ever made, smoked included, and i did them in the oven with a new recipe. Nice and crispy and amazing

Coat the wings with a very light dusting of baking powder and lightly salt them.

Put them on a rack on a baking sheet so there is airflow all around.

30 minutes at 250 degrees

Then crank it up to 425 degrees for 40 minutes
Toss them in your favorite sauce or rub.

If doing a rub (we did lemon pepper) toss them at 30 minutes into the 425 degrees then put them in for another ten minutes.
