Made some open-faced sandwiches with leftover roast the other night. Decided it needed some mashed potatoes to go with it so I peeled/boiled three potatoes. Got halfway through and grabbed the meat to slice it, which is when I realized we had some veggies left over with the roast - red potatoes, celery, and some baby carrots - so I tossed them in with the potatoes to boil. Then I found a thing of leftover cauliflower florets that were close to going so I trimmed some pieces, washed them, and tossed them in as well. Once everything was properly mushy I threw them in the mixer and then, because it sounded like a good idea, I threw in a packet of onion soup mix. The roast I cooked in the gravy so both would be warm by the time the potatoes were done. Oh and I sautéed some onions as well to go on top of the meat.
Lightly toasted the bread and put the meat and onions on with the potatoes on the side. It was pretty dang good for last minute. Didn't need any of the gravy for the potatoes, they were really good by themselves.

I wa gonna make scallops tonight, but the only ones they had looked shitty, so I went for lobster tails instead. Cheaper, too. So tonight is lobster tails and risotto. I've never made risotto before so we got this kit for the first time. Looking forward to it.
