my method is usually 2.5 hours on the smoker (first saucing/lacquering at the 2 hour mark), then 1 hour in foil (second saucing/lacquering when it's removed), then about 30 minutes back on the smoker

have you ever used the 2-2-1 method smoking ribs? thats my favorite
is that like 2 hours on the smoker/2 hours in a foil packet/1 hour to eat?
pretty much..thats for baby backs. I'll add an hour to the first part if its spare ribs
what is your saucing philosophy
i'm a dry rubber and sometimes just salt and pepper..if we're cooking for a lot of people i will supply some different sauces on the side
do you make your own sauces or nah
sadly i do not, I buy about 3 or 4 different ones from a local maker here..you?
i make the one that i use for slathering on the ribs, it's great: pickapeppa sauce, the adobo liquid from a can of chipotle peppers, a small can of pineapple juice, honey, and worcestershire sauce. adjust the ratios according to taste.
