Entire relationships hinge on this sort of thing, not to mention the bottom line for the restaurant's ledger book at the end of the night.
A dining room playlist is not to be taken lightly. From a restaurant's perspective, you want to play music that makes guests want to enjoy themselves yet quickly move on to the next thing on a busy night (maybe a Stax Records collection or some modern pop in the way of daft punk or arcade fire) and you want music that coaxes guests to cozy up and order that last round or that dessert on a slow night (early Texas blues perhaps, or maybe something in the vein of Wes Anderson soundtrack artists.)
From a guest's perspective, you'll want to hear music that is both unobtrusive and interesting enough to spark a thought or maybe a conversation, though oftentimes a guest doesn't realize that they want this until they have come to a restaurant that fails miserably at this concept.
Then there's the issue of volume. Oh boy, is this important. It's sometimes easier to forgive the too-liberal use of seasonings in a chef's dish than it is a dining room soundtrack that is loud enough to smother a conversation.
Use this thread to discuss how music in a restaurant dining room has affected you.

I manage a restaurant that strives to do many different things well and is open continuously from 9:00 am to midnight. From a coffee shop to a late-night cocktail destination, moods are constantly evolving. I think about music in the dining room constantly.

one of my favorite places to eat in NY was Babbo. The food was always outstanding as well as the conversation but I would always come home and remember eating a lamb chop just as When the Levee breaks would come on and then make my way to dessert and listen to Michael sing Half a World Away

The Stax records in the OP is pretty much perfect. We spin a lot of JJ Cale, Al Green, or mellow Neil Young for a small dinner, never at an obtrusive volume.
Curtis Mayfield, The Allman Bros, rockin' Neil Young, and Creedance are all on if it's a larger dinner party.
If we're hosting brunch, it's usually Gillian Welch, Carolina Chocolate Drops, Jerry Garcia & David Grisman, Sam Amidon, or anything else bluegrassy.
I have a playlist that consist largely of rock music (as most of my playlist do), but this one is more on the chill side. It's not chill like "downer" vibe though, it's more like my version of easy listening rock.

Sloop John B - The Beach Boys POW - The Beastie Boys Off The Grid - The Beastie Boys No Excuses - AIC I've Just Seen A Face - The Beatles I Want You - Bob Dylan Moonlight Drive - The Doors Sunshine Superman - Donovan Rocket Man - Elton John Promises - Eric Clapton Waitin' For a Superman - the Flaming Lips Horrible Day - Frank Black & the Catholics I Can - Golden Smog May This Be Love - Jimi Hendrix Life Of Illusion - Joe Walsh Sunny Afternoon - The Kinks Going To California - Led Zeppelin About A Girl - Nirvana Spit On A Stranger - Pavement Thin Air - Pearl Jam Fearless - Pink Floyd Wave Of Mutilation (UK MIx) - Pixies Tongue - REM Scar Tissue - RHCP Dead Flowers - Rolling Stones Dream Baby - Roy Orbison 1979 - Smashing Pumpkins Peace Attack - Sonic Youth This Must Be The Place - Talking Heads Handle With Care - Traveling Wilburys Vibes & Stuff - Tribe Called Quest Wild Honey - U2 Sunday Morning - Velvet Underground Summer Teeth - Wilco
