Generally wing it at this point. Most important parts are searing before slow-cooking, and I’m a fan of including an aromatic digestif wine like Porto or Madeira

so the ribs turned out great. i just wasn't a huge fan of the red-wine sauce (i'm more of a savory guy, and my tastebuds are tricked into thinking that a sauce like that will be more similar to a gravy).
