I don't do anything fancy with it except roast it. Cut it in half, scoop the guts out and pop it in the oven on about 350-400. Let it do it's thing for about an hour - an hour and a half. You can brush a bit of olive oil on it, and sprinkle with salt if you'd like also. I use it to replace pasta and oatmeal a lot, but it's great on it's own too.

Yeah, but there's some that need to come out - the parts that are connected to the seeds. It's pretty obvious when you cut one open, until it's cooked, it more or less looks like regular squash. It doesn't get stringy and pasta like until it's cooked.
