They do have a registry and this isn't in it, but I happen to know that they love cooking and only have one kinda crappy chef's knife

Jorge do you think he'll actually appreciate these knives to the extent that he'll maintain them? There are people I'd never buy these for because they won't take cafe of them, then I'd judge them every time I visited and saw their gradually declining set of knives.

It's a solid point but I definitely think my brother would take good care of them. He was a line cook for years and developed a love for cooking, and I think he'll really like them. He's also a scientist. This is an unrelated fact but I just wanted to mention it
