I did some quick research, and it appears the first instances of mac and cheese date back to 14th century England.
Thought modern 20th century, it’s definitely more associated with America. Depression food.
Still, I’ll call it a food trend in the UK, because it was noticeably everywhere - and at higher end restaurants you wouldn’t normally think to see it - more so than during past visits.
