This morning I had to share the oven with my wife. I was doing a bread bake, which requires 20 minutes at 475 in a covered dutch oven and then 30 minutes at 450 with the lid off. She needed to use the oven to roast some veggies for our son.

I thought, briefly, that it would be fun to fire up the charcoal grill after that covered portion of the bake and smoke the loaf at 450 for the last half our. I still might try it one day. Seems like it would make sense. You're still using convection, and I bet the smoky flavor seeping into the uncovered bread crust would be wild.

Also, I wonder if you can achieve a good bowl of steel cut oatmeal using a french press.

Convection is tricky. First of all, most consumer ovens do a piss poor job of actual convection. It any rate, I would never look to a grill to achieve a similar result, unless you happen to live in a place it is consistently windy or something?

What would be the purpose of a French press oatmeal? You’re not just siphoning the water and tossing the oats, so are you hoping for a unique texture or something?

But now this has got me thinking about whether or not I could approach oatmeal like a risotto sometime…

Well, as I waited for the water to simmer off the oats (because it was an abnormally rushed morning today) I got to wondering how I could expedite the process. I had an aha moment thinking that pressing the oats and draining off the water would do the trick. They felt soft enough, but my strainer's holes are too large.
