these were probably the best ribs i've ever had

did you do anything special/different?

i let the ribs sit out for longer than usual before throwing them on. i used a different rub (famous dave's). i was able to keep them lower at 230F for about a third of the cook - as great as the egg is, i struggle to keep it lower than 250F normally. used hickory, and more than usual to really get that crust. it was also my first time basting with this awesome sauce i found - lillie's hot smoky (memphis style w heat).

Do you typically make your own rubs or sauce? Or just go premade?

Feel like this will be me today.

I'm not gonna get to lunch until after 4pm. Not sure I'll be hungry for dinner. We'll see.

I usually don’t eat breakfast, or if I do just have a smoothie. But today I had a rare breakfast, which will probably make me skip lunch bc I won’t be hungry. Then i might go grab a wild salmon sandwich and a couple of beers for dinner.

Salamon and beer are probably the two greatest things you can put inside yourself.

I’ve been bouncing around a few groceries — and even one of the butcher shops in town — and apparently brisket just isn’t a thing here.
