i let the ribs sit out for longer than usual before throwing them on. i used a different rub (famous dave's). i was able to keep them lower at 230F for about a third of the cook - as great as the egg is, i struggle to keep it lower than 250F normally. used hickory, and more than usual to really get that crust. it was also my first time basting with this awesome sauce i found - lillie's hot smoky (memphis style w heat).

I usually don’t eat breakfast, or if I do just have a smoothie. But today I had a rare breakfast, which will probably make me skip lunch bc I won’t be hungry. Then i might go grab a wild salmon sandwich and a couple of beers for dinner.
