I could with cast iron all the time. I assume it’s the same with steel carbon (which I also use a lot). So induction is out.
I knew both you and Doug did. That’s why I wanted to tell you. My FiL was so excited when they got their new stove. They’d had the old element burner model since the mid-80s and the induction model was gonna be great! After they bought it and it was delivered and they started using it he found out you’re not supposed to use cast iron on it. I don’t remember when he found out or even if he had used it before he found out but by that point he was beyond the timeframe in which it could be returned. And boy was he bummed out.
They actually just yesterday sent me a 12” ceramic skillet that has a small bow in the base of it. Because the bow won’t set evenly on the “burner” it can’t be used on the stove because the entire skillet isn’t in contact with the surface. They really wish they’d gotten something else.
Also, I don’t have the uneven cooking with gas. That usually comes from my pans. Each of my cast irons have a different spot that cooks just a bit lower temp than the rest of the pan. My non-stick don’t really have that problem but it’s definitely noticeable with the cast irons. However, it does take forever to boil a pot of water with gas. Drives us nuts.

i should've clarified - the uneveness isn't with cooking on the cook top, but rather sometimes with baking in the oven.
And what is this separate "non-stick" of which you speak? my cast iron is non-stick (i'm very proud of that patina). get those sprayed-on chemicals outta here!
