Not really. There are different ratios and consistencies involved. If something calls for just salt, the assumption is that it’s simple table (or iodized) salt. The only time I ever use table salt is for wet brining. Otherwise I use kosher salt. It dissolves more uniformly and does a better job of keeping moisture in meat with a dry brine.

Here, because the salt crystals are larger, they’re more oil soluble and therefore do a better job of absorbing the lemon and orange flavors.

we used to go smelt dipping in lake huron every april as a kid. sadly, the smelt population is WAY down in the great lakes.
