wife and she are upstairs. She was riding shotgun on the counter in her little bouncy chair thing for a while, but then she took a humongous dump just as my water was starting to roll so I had to bring her upstairs.

looking good..ramen is one of my favorite things on earth and it always come down to broth for me..i have to say i still love momofuku broth..i had a similar once that takes 2nd place in vancouver bc a few years ago

So for the broth, you're supposed to "deeply char" the onion, garlic, and ginger. I'm not sure exactly how "deep" it's supposed to be, so I went with this amount:
As per the recipe, you're supposed to skim the brown gunk from the surface for the first 20 mins or so, with a natural clarification beginning to happen at that point. That held true, with a bit being skimmed off, and more being wiped off the rim of the pot with a wet paper towel:
So I think I'm on the right track, because none of that stuff is appearing any more:
The broth just smelled like burnt alliums for the first two hours of boiling, but it's starting to take on a more complex aroma from the bones and pork belly.
The eggs were pretty easy. Kenji suggested using a thumbtack to pierce a tiny hole in the bottom of the eggs before soft boiling. I couldn't find one, so I devised this method using a needle and ice cream scoop that I'll just use for the rest of my life now:
I lost one egg while trying to de-shell, they are really fragile. But the other five are now marinating in a combination of soy, sake, mirin, sugar, and water:
Gonna clean up a bit then get this pork belly going.
