Yeah, a Mexican chocolate brand. The stuff comes in those packages and you just break some off and heat in a pot with some milk. Distinctly cinnamon flavor comes through with the chocolate. It's delicious. The ice cream tasted just like the beverage, which was a little disorienting in 90 degree weather considering that the cocoa is enjoyed in winter months. Very satisfying, nonetheless.

Line 9- by 5-inch loaf pan with plastic wrap. Place a 12- by 8-inch piece of parchment paper into pan, letting sides overhang the edges. Spread pistachio ice cream into pan and smooth the top. Freeze until semi-frozen, about 20 minutes.

2.
Stir vanilla ice cream, chopped cherries, almonds, brandy, and almond extract until combined. Stir in food coloring (if using) to desired shade of pink. Spread over pistachio ice cream. Freeze for 30 minutes, or until semi-firm.

3.
Spread chocolate ice cream over cherry ice cream and smooth top. Wrap and freeze until completely solid, 3 to 4 hours. Remove from pan, remove wrap, and slice with a hot, wet, knife.

Gotta say, I've never thought of taking the lack of spumoni in my life into my own hands. This is my weekend project.

Bought a bunch of 4oz containers of Hagen Daz today. Mostly vanilla because it’s part of my weight loss plan. I also bought a couple strawberry and chocolates and a box of Its It - to keep Mr. Pep off my vanillas.

Found some spumoni hiding in the freezer at the supermarket so I grabbed it. It's got chocolate chips in the chocolate ice cream and that's just weird. It's not a deal breaker, but it's not a great mouth-feel. Tastes great otherwise, though it could use more cherry chunks.
