i like mickey's approach of a high-brow, mid-brow, and low-brow cheese, so:
high-brow: Comté, the older the better. Serve it with mustard if you like. Magnificent.
mid-brow: Emmentaler. Cafe Pedlar (RIP) in Brooklyn used to have a sandwich that was just emmentaler, butter, and mustard and a whole-grain bread that was to die for. Also elevates any grilled cheese.
low-brow: Brie cheese wrapped in croissant dough and jam, baked. Could eat the whole thing. Never gets old.
definitely going to try trag's croissant dough, brie, jam thing.
i didn't know the extent to which i don't know shit about cheese. (but i echo mick's manchengo pick)
