After trying out a bunch of their sauces, I am ready to declare Cholula as my least-favorite of the big brands. They should not even quality as "hot sauce". Their bottles look good with the wooden top and the taste is often decent enough, but the heat barely registers. A hot sauce should be at least a little hot.

I maintain that Cholula is great on sandwiches, especially ones made with sourdough. I’m fine not calling it “hot sauce”, but do try it on a hot ham and cheese on sourdough with red onions and shredded lettuce.

I picked up a mole and a sichuan bottle of this fermented hot sauce last weekend. Neither of them have as much heat as the bottles would lead you to believe, but the flavor on both is out of this world. The lack of vinegar in these recipes is a real treat to the palate. I think the sichuan bottle is my favorite.

I was at a kitchy Tex-Mex chain that bottles their sauce on the table, so I asked the waitress if their bottles were for sale. She said they weren't, but that people steal the bottles all the time and that I should steal that one.

I bought bottles of Dirty Dick's, Yellow Bird, and Secret Aardvark on Jorge's recommendation and I am very happy with my purchase. All three are fantastic in their own way.
Dirty Dick's might be my favorite, but is also probably the least versatile. Reminds me of a thai style chili paste, but despite having plenty of heat it also has a nice sweet fruitiness to it. I love this one and will be putting it in asian style rice and noodle dishes a lot. I'm probably going to put a bottle of it in the work fridge because they do stir fries in the cafeteria at least once a week and their sauces are bland af.
Secret Aardvark to me is the most basic, but that's not a criticism. It's a fantastic, tomato based sauce that I can picture being good on almost anything. Jorge told me this would be the most versatile and he's right.
Yellow Bird is amazing. Similar in heat to the other two, and somewhere between them in overall flavor. It's not as "exotic" tasting as Dirty Dicks but there's some fruit in there that gives it a subtle uniqueness that makes it stand out from the Aardvark type sauces of the world. After looking at the ingredients, I think it's the tangerine flavor that's doing it.
All three of these are 4 to 5 stars. Would highly recommend.

The only one of these I had never tried is the Queen Majesty Scotch Bonnet + Ginger which is mindblowingly good. All the others are old favorites.
I passed on your Queen Majesty recommendation in a shop in Austin yesterday because I smugly thought that I could find it at a specialty place I know in Houston. Yet I bought Secret Aardvark, which is literally everywhere now. Checked my local store’s website and now see that I can not get QM there. Joke’s on me.
