i made sweet potato fries tonight with a nice seasoning and dipped them in mayo and they were delicious.

no, the first side is done when it's flipped. your taco meat dilemma is a good analog, but in that case i can just leave the utensil in the pan for a while. This is less easily done with my grill.

But his point with the burger is you don't get raw meat on the spatula, because you are flipping it when the side is done. Also, you shouldn't be flipping it a second time. I'm confused, because didn't trag pose the question but then agree with wease?

To transfer the cooked meat to a clean plate, you should be using a clean spatula that has not touched the raw meat. When you are cooking, you can re-use the spatula from raw to almost done. The reason for this is because the amount of bacteria that will remain on the spatula is very small, and will cook very quickly as you continue to expose the meat to heat.

I just set my spatula so that it hangs over the grill for a bit and any bacteria on it get killed.

Also, I don't use ketchup on anything BUT fries. That being said, I find it to be a critical taste in my enjoyment of said fries.

It's fine on sweet potato fries, but there are better choices.

This has been my approach but it was that last step. Obviously I didn't contaminate my food -- I typically do exactly as you've suggested here, but last night was thinking "There's got to be a better way!"
