Sounds good to me. A barbecue place near me puts a little dash of brisket rub on their french fries--I'm curious if that might be good for these too.

Post. Like the seasoned fries a lot of places do but with their own rub. It's pretty damn good.

Hypothetical: Say you've been waiting in line for thirty minutes after driving a few (not too many) miles out of your comfort zone. You've still got twenty or so people ahead of you when the staff announces that the brisket is gone and there's a count on ribs and sausage. Plenty of turkey left, though.

Do you:

Leave?
Stay?
Wait and see what the people in front of you are going for?

This hypothetical assumes there are more food options within walking distance.

I think I'd leave after watching, waiting, and seeing the sausage count go down. It's a given that the ribs are a crapshoot at that point, but I could handle waiting if I knew here would still be sausage.

Typically, the hole-in-the-walls there have way better flavor than the chain bbq shacks.
