i should take this to the admit thread but i never check the meat temps..sight and feel..i'll sometimes use a thermometer on a large brisket or pork shoulder after 10 hours but thats about it

so we are throwing a party this weekend at our place..as of now about 60 people coming which are all my wife's employees..i just ordered a 13 pound brisket and an 8 pound pork butt. this means I have to smoke meat about 36 hours straight starting thursday night.. :?
