Anyone else enjoy making their own pies? I've been honing my process for several years and have it locked in. I have a great dough recipe (70% hydration) with a 3 day cold ferment. My sauce is actually my dad's old pizza sauce which I've always loved (for detroit, deep dish/cast iron skillet and rustico sheet pan with lots of parm) or a very simple crushed San Marzano style for margherita style on the stone.
