Son of a bitch my favourite breakfast has been pulled from the menu. The bastards felt like a change after 5 years and the french toast was dropped. Of course I had a chat with the owner to no avail.

One thing I always do for ALL pancake recipes: Mix 1 cup milk with 1 Tbsp apple cider vinegar or lemon juice before you tackle the rest of the recipe. It creates a quick faux fermentation, and results in gloriously fluffy pancakes. In this particular recipe, I did 3/4 c milk with 3/4 Tbsp apple cider vinegar.

Could you not just use buttermilk?
And thanks for the link. We'll definitely be trying this.

Yep, totally. I just never almost never buy buttermilk, because I inevitably wind up using half the container, and sitting on the second half until it's past its prime. But maybe I should just buy buttermilk regularly, considering I make pancakes most weekends.

Buttermilk never goes bad. But, the flavor does get weaker over time.
