Alright boss, here you go. After a couple attempts at these, I've combined the ingredients from these two recipes. I'd suggest following my recipe, and watching the two videos at the links for some visual cues.

Here's what I'm working with, for 6 pancakes:

3/4 c flour
1/4 c sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extrac
1/2 c milk (plus more as needed)
2 egg yolks, whisked together
4 egg whites, beaten with an electric beater until they form stiff peaks
Cooking spray or butter

Whisk the dry ingredients together, then add the vanilla extract and milk and whisk again. If the consistency looks much thicker than in the video at the second link, add a little more milk.

Beat your egg whites with an electric mixer until they form stiff peaks. Fold thoroughly into your pancake batter.

Get your pan/griddle to med-high, spray or add some butter, then lay your three ring molds into the pan. Fill the molds halfway high with the batter. Cover the molds with a lid -- it doesn't need to cover the pan entirely, just the top of the molds.

Let the pancakes cook for 4 minutes -- they should rise considerably.

Using a thin spatula and a pair of tongs, flip your molds, being careful not to flip them too harshly (watch the video at the second link) The batter shouldn't fall out. Cook for four more minutes.

To remove from the molds, you'll just want to shimmy the cakes out with a thin knife, offset spatula, or similar.

Et voilà! Serve with warm maple syrup, fruit, whatever.

"Outstanding" is overstating my skills, and I believe "chef" should be reserved for those who execute a retail menu and direct a kitchen staff (which I kind of do, but not really)...I would say I'm a very good home cook.
