Breakfast tacos consisting of eggs, bacon and potatoes with sweet bell pepper, jalapeño and yellow onion cooked with potatoes. Maybe a little cheese on them.

Made Japanese pancakes today. Incredibly light and fluffy and delicious. The technique was a challenge, and structural integrity was varied.

Indeed. Only problem was that I didn't use ring molds, but rather aluminum pipe fittings from the hardware store, lined with tin foil. The fittings were too tall, so the pancakes didn't rise to the top. So when it came time to flip them, the top side (now bottom side) wasn't touching the surface of the pan. Also, they were hard to get out because of the wrinkles in the tin foil...

The end result was very similar to what you see in the gif, just a little less perfect looking. The center was like a custard. Really delicious. I think next time I'll try a couple with a dash of orange blossom water.

Every time I sit at a diner, which is probably three or four times a month, I have a grand idea that I'm going to order pancakes, eggs, sausage, fruit, the whole nine. Sometimes instead of pancakes, I think I'll go for french toast or crepes. Yet, when it comes time to order, I can't pull the trigger. I go for english muffins or toast instead.

I don't know why I keep doing this.
