Using Impossible? Not sure how they’d attain a good crust.

Without ever having cooked one, I'd start by blotting the excess moisture off the patty, and seasoning liberally with salt.

There’s a lot of beet juice in them, so I suppose that might have enough sugar to caramelize. Would fat be needed too though?

the formula is sugar + amino acids + high heat. So without knowing exactly what's in an impossible burger, I'd suggest maybe coating the thing in egg white, milk, or some other mildly flavored protein?

Sounding like a cast iron or grill is the way to go with this thing.

Also this whole conversation should be happening in the burger recipe thread.

36 inch 4 burner. It is really great for big breakfasts too. I can have some of the burners a little hotter for bacon and hash browns and still cook pancakes at a lower temp.

and it is aging so well. You have to do a lot more to clean it to keep it up, especially with it being outside, but as the griddle gets more seasoned it just cooks better. Burgers especially.

In my experience, blackstones seem to be the standard on barbies in Australia, instead of grates. That’s always interested me.

I took it as bad news. I’d hoped the PNW would be somehow miraculously immune to the shortage and then I’d start shipping it out to you all.

Spoiler: show
At exorbitant markups, of course.
