Is this why you're always BBQing for your wife's friends?

If you're making ground beef put some diced gold potatoes in there. Tomato paste is good to add as well.

Chicken thighs cut up into chunks, marinated in adobo or another chile/garlic/lime/whatever you like for a long time and then sauteed is really good, I like dark meat since it picks up flavor like crazy and it stays more tender.

If you have a gas grill, flame your tortillas ever so slightly to give them some color and then wrap them up to stay warm.

Buy two or three salsas that you would eat a whole jar of.

If anyone finds themselves in downtown Rosarito Beach, Mex, do yourself a favor and search out the hole in the wall (literally about 6' wide) fish taco stand near the souvenir shopping maze. Hand dipped beer battered fish, made on demand served on in house corn tortilla fresh off the tortilla machine. slaw and salsa bar.....$1/ea

Family was there for Halloween last year....the two guys behind counter had wrestling masks on and Mexican wrestling clips were playing on TV

Usually set in a light mayo or sour cream based sauce
