Here's a couple of things I've learned here and there about dry beans.

Salt them when they're slightly tender.

You don't really need to soak them. The time saved is minimal and soaking can lose flavor.

I guess that's all I've got so far. I love these things lately.

You can't make a pot of beans without ham hock. That's just all sorts of wrong.
