Is Winds of winter the last book?
No. If it ever comes out it will be the 6th book. He's announced it's 7 now. It was 3 originally, then it became 5 at one point and it's been 7 for a while now but I'm sure he'll announce at least an 8th book if he ever finishes Winds of Winter (which SPOILER ALERT!!! .... he won't).
The vindication I'm going to feel towards you when it's finally released is going to be so, so sweet.

I find the main books to be bloated and a chore for the most part.

On whether JonCon knows R+L=J
Connington's entire motivation is based on his unrequited romantic love for Rhaegar. Everything he's doing for Young Griff is out of the shame in failing the love of his life. If he was aware that there was another son of Rhaegar he could be fighting for, I think it changes a lot about Connington as we know him in ADWD. Even if his exile to Essos doesn't allow him to change his actions from what he's doing in Dance we still have his inner monologue. He'd know that Aegon wasn't really the last chance at restoring Rhaegar's heir to the Iron Throne and I think that would drastically alter the way he feels about everything he's doing, for better or worse.
I did see a WONDERFULLY tinfoil theory that it's gonna be Lady Stoneheart. And I goddamn LOVE that, too. It would be fucking perfect in the books. But since there is not LS in the show, it has to be Arya.
Jamie certainly does make thematic sense, though. But I just feel like so does Arya (especially in the show). And I wonder if it would be out of character for Jamie.

Jamie as Azhor Ahai would make the most sense; plunging his sword into the heart of the one he loved tempered the steel that forged Lightbringer and ended the long night.
