7/8 is alternating bars of 4/4 and 3/4. It's very easy to count. You just cut off a beat on the second bar and return back to the one. 1-and-2-and-3-and-4-and-1-and-2-and-3-and.....

11/8 is alternating bars of 5/8 and 3/4. So it would be 1-2-3-4-5-1-and-2-and-3-and....

13/8 is alternating bars of 5/8 and 4/4. So it would be 1-2-3-4-5-1-and-2-and-3-and-4-and...

21/8 would make your head explode.
