I don't know how involved Giles Martin is beyond doing the remixes. But in all seriousness, they are very far from being the gold standard when it comes to these kind of sets. It's from the same sessions as those two songs but George Harrison hated it and refused to finish it. So there was no "new" song on Anthology 3 as a result.
The main difference in the 2023 production is that they used the Apple Stereo Spooge Machine™ to extract Lennon's vocal and piano from the demo cassette, and they utilized backing vocals from old Beatles songs to create new ones.
Well done to modern technology, from managing to get those Lennon vocals clean out of the mix. But don't see why they had to have Lennon vocals at all for a newly published song. All the other three sang on plenty of Beatles songs. Surely there must be some Paul gem deep in the archives, even after all these years.

Yellow Submarine is in that run so in my mind it doesn’t top the run from Beggar’s Banquet through Exile on Main Street, and I personally also love Goats Head Soup.
