One of my all-time favorites is on DJ Shadow's Mutual Slump, when the girls says "then I came to America, saw Xanadu, and that's all I wanted to do: roller skate."
- Jay-Z sampling Snoop's "Murder Was the Case" in "D'Evils" - Kanye sampling Steely Dan's "Kid Charlemagne" in "Champion" - Nas sampling his own lines from "NY State of Mind" on "The Message" - Mos Def sampling Aretha Franklin's "One Step Ahead" on "Ms. Fat Booty" - Beck sampling Them's cover of "It's All Over Now Baby Blue" in "Jackass" - Elvis Costello sampling his own "Satellite" in "Tripwire"
Also always really liked the BB King sample in that Primitive Radio Gods song. Also the Herbie Hancock sample in "Flip Fantasia."

Sometimes I forget the Beastie Boys sample "she thinks SHE's the passionate one!" from "Ballroom Blitz" on "Hey Ladies", and when it shows up it gives me a little thrill
Basically any steely dan or parliament death row sample
