I understand this is a pretty broad question, but I'd like to hear everyone's answers. Of course it depends on the type of bar, the time of day and the day of the week.
The bars I frequent as of late all have great patios and refreshing cocktails, and in that setting I'm a sucker for a playlist full of Meters, Booker T., Stax stuff. The bar I manage is heavy volume, near stadiums and music venues. We serve lots of beers and douchey shots. I've realized that upbeat indie dance type stuff seems to create a good energy in the room. LCD, Hot Chip, Ghostland. There's a few breweries on the north side of town that plays Mastadon, Sabbath, Metallica. That really seems to work for those guys and have helped me appreciate heavier stuff more than I ever have. They've got classic arcade games too.
I could talk about this all day.

I'll post my jukebox regulars in a little bit.. I put way too much money in that thing but I hate listening to shit music and music in which I don't understand the words
It really depends on the bar. Most of the time I want music that's not too loud or recognizable but that I can groove to should I decide to tune in.
One thing I know for sure, it's impossible not to have an amazing experience at a bar when Living on a Prayer is played. Impossible. That song bridges all occasions and heals all bar-related wounds. You will make best friends with strangers and have the time of your life when that song comes on. I'm not sure why. It's not a great song. But there is some kind of terrible, awesome magic in it.

AZ Wilderness has a nice mix of stoner metal and modern rap with a few local artists (JEW, Gin Blossoms, Meat Puppets and Calexico) thrown in.
They tend to avoid the brewery cliches like the aforementioned Gary Clark Jr., Black Keys, Tedeschi Trucks Band and Alabama Shakes and overuse of '90s alt.

I like both those bands. Should I put that in unpopular music opinions thread?
I say avoid Journey and Bon Jovi. They have the wedding circuit, let them stay there. And there’s really nothing that makes me hate humanity more than a bunch of drunk people belting out either of those aforementioned at 2am. I only grew up to avoid that scenario.

You're in the hospitality business, so your role is to be hospitable: Make as many people as comfortable as possible. So...
1. Not too loud. I'm here to have alcohol-fueled conversation or maybe watch a game. Please don't give me ear fatigue or a headache inside of ten minutes.
2. Nothing that came out within the last several years. I hear that shit all the time, everywhere. A bar should be a respite from the draining monotony of the everyday world. I don't need to hear Radiohead as I drink my whiskey, because I can do that at home just fine, thanks.
3. No full albums.
4. No ballads (this is more for your benefit, because if you make me sleepy I'm leaving).
5. No irony: No Bon Jovi, no Brittney Spears, no Rush, nothing that a large amount of people would agree sucks. I promise you not one single customer will hear this music and think, "Oh, isn't that funny, they're playing a shitty nu-metal song that was popular in 1999 but we all now agree is garbage. Whoever composed this playlist has all the ironic brilliance of Dennis Miller circe 1988!"
6. Please play a mix of songs that sets the right mood for the location, time of day, weather, general vibe in the air, and your guests. Make sure your mix includes songs that lots of people will recognize, even if just vaguely, but probably haven't heard in a while; be sure to include some deep cuts or oddball singles. Things that have an elemental familiarity are safe bets: Neil Young, JJ Cale, Nas, Wu-Tang, The Cure, etc.
